At the moment we have only one computer for 3 employees of our non-profit campus ministry. We are looking for one more computer and moniter for our office that will enable folks to work on documents as well as be connected to the internet.

Free Geek has a couple of ways to get a "free" computer: get trained on how to do it and build a few systems (not as time-consuming as you'd think; fun and straightforward) and you get the 6th one you build, or put in a certain number of hours and get a free system. All computers are Ubuntu Linux based, so if you do standard office things like email, web, and Office (--> "OpenOffice"), you're in great shape. If you need accounting packages like Quickbooks, though, you'd probably want to ask around about how to handle that (or just use it on one Windows computer).

Hi. Craigslist is great place to find used cheap/free computer equipment. You should have no problem finding free monitors.
